The Croquembouche Bondi project was the upgrade of an old and tired Patisserie that had passed by the wayside.
The front of house required a complete strip out due to the non-compliant and terribly out of condition furnishings and construction works. The back of house required a lot of upgrade works but at least we could retain some of the surfaces without a full demolition!
The clients were very specific with regards to their counter and display requirements. They wanted a low height glass canopy on the cold display with a stone topped cold display for displaying their many beautiful pastries.
The colour theme they chose was very neutral and understated but with the new timber shopfront and their beautiful furnishings and products it really transformed the front of house area. The end result was the creation of a striking yet elegant patisserie.
